You can only have so much zucchini bread before you go crazy.
With every one's garden bursting with wonderful, green bounty it seems that everyone is looking for something new to use up their crop.

Here is what the Olson Bunch is having for dinner tonight- a simple zucchini casserole that even the kids will eat....

3/4 lb zucchini, grated (not peeled- we just cut it into chunks)1 lg onion, minced (actually, we hate onions, I just added a few dashes of onion salt)
3 slices bacon, minced (eh- we're out of bacon so I added about 1/2 cup pre cooked breakfast sausage, minced)
4 oz shredded cheddar cheese ( or more- can you have too much cheese in anything?)
1 C. flour
1/2 C. vegetable oil
5 eggs, slightly beaten
3/4 tsp salt
1/2 tsp pepper

Combine all of the ingredients in a bowl. Pour into a buttered casserole pan and bake at 350 for 40-50 minutes until golden.

Even my kids will eat this thanks to the cheese factor.
